GLUTEN FREE CHOC CHIP CHEWY COOKIESINGREDIENTS:185g butter melted and cooled 1 cup firmly packed brown sugar ½ cup caster sugar 1 and a half cups of gluten free self raising flour ½ cup gluten free plain flour 1 cup coarsely chopped macadamias or almonds toasted 1 egg beaten lightly 1 egg yolk beaten lightly (can use egg replacer if required) 2 teaspoons vanilla essence 200g gluten free choc chips ("tropical source" brand ) METHOD: Combine sugars, sifted flours and nuts in a large bowl Add combined cooled butter, egg, egg yolk or egg replacer and essence. Mix to a soft dough (can be done in a food processor) Stir in chocolate chips Place dessertspoonfuls of dough approx 6 cm apart on a greased tray and cook in a moderate oven 15 to 20 mins Cool on trays Enjoy :) Visit www.glutenfreeshop.com.au for your gluten free ingredients. |
